Food Storage Recipe Monday

I thought that it would be a great use of this blog to post food storage friendly recipes every Monday. I have gotten several comments that people would LOVE more recipes. If you have a recipe that you love and would like to share, please email it to me!

Yum Yum Brownie Muffins

1 (18 1/4-ounce) box devil’s food cake mix
1 (15-ounce) can 100-percent pure pumpkin

Preheat the oven to 400 degrees F.

Pour cake mix into a large bowl and whisk to remove any lumps. Add pumpkin and stir until completely smooth and uniform. *Do not add any other ingredients. The batter will be thick but that is what it is supposed to look like.

Place batter into a 12-cup muffin pan lined with foil baking cups and/or sprayed with nonstick spray. Place pan in the oven and bake until a toothpick inserted into the center of a muffin comes out clean, about 20 minutes.

Allow to cool slightly and then serve.
