Food Storage Recipe Monday

Posted by imawheatwatcher on May 2, 2011

I thought that it would be a great use of this blog to post food storage friendly recipes every Monday. I have gotten several comments that people would LOVE more recipes. If you have a recipe that you love and would like to share, please email it to me!

Pennsylvania Applesauce Bread

2 C flour (I would use 1 cup AP and 1 cup whole wheat flour)
3/4 C sugar
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
1/2 tsp allspice or nutmeg
1 tsp vanilla
1/2 C shortening
1 C applesauce
2 eggs (2 TBS egg powder + 1/4 C water)
1/2 C chopped nuts (optional)

Preheat oven to 350 degrees. In large mixer bowl, combine all ingredients except nuts. Beat at medium speed until well blended. Stir in nuts (if desired). Pour into 9″ X 5″ loaf pan which has been greased on the bottom only. Bake at 350 for 55 – 60 minutes until toothpick inserted in center comes out clean. Loosen edges with spatula; remove from pan. Cool thoroughly before slicing.

I got this recipe from my MIL.
