    Wheat Watchers meets monthly on the 3rd Wednesday at 7:00 pm at Kathy's house.

    We've talked the talk, now it's time to walk the walk. I'm letting the blog, newsletter and e-mail do most of the talking and leaving the meetings open for much more DOING!

Food Storage Recipe Monday

I thought that it would be a great use of this blog to post food storage friendly recipes every Monday. I have gotten several comments that people would LOVE more recipes. If you have a recipe that you love and would like to share, please email it to me!

Club Chicken Casserole

1 C rice, cooked
3 TBS flour
1 1/2 tsp salt
1 2/3 C evaporated milk
2 C cubed and cooked chicken ( I would use 2 cans of chicken)
1 10 oz frozen chopped broccoli, thawed and drained
1 3 oz can of sliced mushrooms, drained (optional)

Preheat oven to 350 degrees. Lightly butter 11 X 7 pan. In a saucepan melt butter and gradually stir in flour and salt. Let cook for a couple of minutes. Add evaporated milk. Cook over med. heat for 5 minutes until thickens and boils. Add chicken, rice, broccoli, and mushrooms. Put in pan. Bake for 30-35 mins.
