Food Storage Recipe Monday

I thought that it would be a great use of this blog to post food storage friendly recipes every Monday. I have gotten several comments that people would LOVE more recipes. If you have a recipe that you love and would like to share, please email it to me!

Easy Chicken Enchilada’s

1 can chicken (you could use 1 can beef chunks or just leave out the meat)
1 pkg. enchilada mix (dry)
1 can cream of chicken soup
1 can tomato sauce (8 oz)
flour tortillas
cheddar cheese, shredded

Cook enchilada mix according to directions on package (this is where the tomato sauce is used in my mix). Add soup and bring to boil. Spread ¾ cup sauce on bottom of 9 X 13 casserole dish. Roll sauteed chicken and some cheese into tortillas and place in baking dish seam side down. Cover with remaining sauce and sprinkle with cheddar cheese. Bake uncovered 350 degrees for 20 minutes or until cheese is melted and sauce is bubbling.

I got this recipe years ago from Lisa R. It is really good and super easy to do.
