Food Storage Recipe Monday

I thought that it would be a great use of this blog to post food storage friendly recipes every Monday. I have gotten several comments that people would LOVE more recipes. If you have a recipe that you love and would like to share, please email it to me!

Sugar-Dusted Blueberry Muffins

1/4 cup old-fashioned oats
1/4 cup orange juice
1 egg ( 1TBS powdered egg + 2 TBS water)
1/4 cup vegetable oil
3/4 cup flour (you can use 1/2 wheat and 1/2 ap flour)
1/4 cup plus 1 TBS sugar, divided
1/2 tsp. baking powder
1/4 tsp. salt
1/8 tsp. baking soda
1/2 cup fresh or frozen* unsweetened blueberries (I used freeze dried blueberries: 1/2 cup freeze dried + 1 cup warm water wait 5 min)
1/8 tsp ground cinnamon

In a small bowl, combine oats and orange juice. Let stand 5 minutes. Then add egg and oil blend. Combine the flour, 1/4 cup sugar, baking powder, salt, and baking soda in a separate bowl. Stir into oat mixture just until moistened. Fold in blueberries.
Coat muffin cups with nonstick cooking spray or use paper liners. Fill 2/3rds full with batter. Combine cinnamon and remaining sugar, sprinkle over batter. Bake at 400 degrees for 18-22 minutes. Cool for 5 minutes before removing from pan to wire rack.
Yield: 6 muffins

*If using frozen blueberries, do not thaw before adding to batter.
