    Wheat Watchers meets monthly on the 3rd Wednesday at 7:00 pm at Kathy's house.

    We've talked the talk, now it's time to walk the walk. I'm letting the blog, newsletter and e-mail do most of the talking and leaving the meetings open for much more DOING!

Food Storage Recipe Monday

I thought that it would be a great use of this blog to post food storage friendly recipes every Monday. I have gotten several comments that people would LOVE more recipes. If you have a recipe that you love and would like to share, please email it to me!

Applesauce Oat Muffins

1/2 C. all-purpose flour (I bet you could use 1/4 c whole wheat and 1/4 c ap flour)
1/4 C. quick cooking oats
3 TBS brown sugar
1 tsp. baking powder (all out try this)
1/4 tsp. ground cinnamon
1/8 tsp. salt
1 egg
1/4 C milk (3/4 TBS powdered milk + 1/4 cup water) *remember to double if using instant
2 TBS unsweetened applesauce
1 TBS canola oil

In a bowl, combine the first 6 ingredients. In another bowl,combine egg, milk, applesauce and oil. Stir into dry ingredients just until moistened.
Fill four greased muffin cups 2/3rds full. Bake at 400 degrees for 12-15 minutes or until toothpick comes out clean. Cool for 5 minutes before removing from pan to wire rack. Serve warm. Yield: 4 muffins Double or triple the recipe if you want more.
