Food Storage Recipe Monday

I thought that it would be a great use of this blog to post food storage friendly recipes every Monday. I have gotten several comments that people would LOVE more recipes. If you have a recipe that you love and would like to share, please email it to me!

Mexican Rice

This is a really easy recipe to adapt to your family’s liking!

2 TBS oil
1 1/2 cups white rice
1 small can (8oz) of tomato sauce
seasonings* to taste
3 cups water

Fry up rice in the oil until color just starts to turn golden. Place rice in rice cooker or pot along with can of tomato sauce, any desired seasonings, and water (minus the amount of liquid represented by the tomato sauce). Cook rice as normally directed. Also, if you want to make more rice, still use only 1 can of tomato sauce. It is for color mostly.

*Can saute diced onion or use dried or onion powder, add cumin, chili powder, garlic powder, tomato bullion, black pepper, salt, oregano, a can of diced green chilis, a can of diced tomatoes (drained), etc. I would use at least a TBS of the seasonings to get the flavor to come through.
