Food Storage Recipe Monday

I thought that it would be a great use of this blog to post food storage friendly recipes every Monday. I have gotten several comments that people would LOVE more recipes. If you have a recipe that you love and would like to share, please email it to me!

My birthday was yesterday and this is the cake I usually have made for me. John makes it and it is delicious! Don’t forget to check the post from yesterday to enter in a chance to win a prize.

Black Midnight Cake

2/3 C shortening
1 2/3 C sugar
3 eggs (3 TBS powdered eggs + 6 TBS water)
2 1/4 C flour (I would use 1/2 wheat flour and 1/2 AP flour)
2/3 C cocoa
1/4 tsp baking powder
1 1/4 tsp baking soda
1 tsp salt
1 1/3 C water
1 tsp vanilla

Heat oven to 350 degrees. Grease and flour two layer pans or a 9X13 pan. Cream shortening, sugar, and eggs until fluffy. Beat 5 minutes on high speed on mixer or by hand. Blend flour, cocoa, baking powder, soda, and salt in a separate bowl. Add alternately with water and vanilla. Use low speed on mixer. Pour into pan(s). Bake layers about 35 min., 9X13 40 to 45 minutes. Cool completely before icing. Don’t forget the post on icing.
