Food Storage Recipe Monday

Posted by imawheatwatcher on November 15, 2010

I thought that it would be a great use of this blog to post food storage friendly recipes every Monday. I have gotten several comments that people would LOVE more recipes. If you have a recipe that you love and would like to share, please email it to me!

This below recipe was submitted by Julie W. (not the pregnant one ;)) Thanks!

Dinner in a Pumpkin

1 medium pumpkin- cut top off and clean out seeds and pulp. Paint face with marking pen.
1 large onion-sauté in oil
1 ½ -2 lbs ground beef-add to pan and brown
1 large green pepper diced-add to pan
2 Tab. Soy sauce
½ -3/4 c brown sugar
1 sm can sliced mushrooms drained
1 10oz can cr. of chicken soup-add above to pan and simmer 10 min.
2-3 cups cooked rice- add to pan
1 can water chestnuts- add and stir

Spoon mixture in to pumpkin, replace top, cover cookie sheet with tinfoil and place pumpkin in sheet in oven at 350 for 1 ½ hours or 300 for 3 hours if at church! Done when fork slides into pumpkin easily. Dish rice and hamburger along with pumpkin into bowl or onto plates and serve.
