Food Storage Recipe Monday

Posted by imawheatwatcher on November 8, 2010

I thought that it would be a great use of this blog to post food storage friendly recipes every Monday. I have gotten several comments that people would LOVE more recipes. If you have a recipe that you love and would like to share, please email it to me!

Creamy Potato Cheese Soup

4 lbs. potatoes, peeled and cut up
8 cups water
1 cup chopped carrots
2 TBS, dried minced onion
2 TBS, chicken bouillon granules
dash of pepper
3 cups cheddar cheese, grated or cubed

In a large saucepan, place potatoes, water, carrots, bouillon, and pepper. Over medium-high heat bring to a boil then reduce heat to low. Cover and simmer for 25 minutes or until veggies are tender. Place 1/2 at a time in a blender. Cover and blend until smooth. Return completed mixture to sauce pan. Add cheese. Cook and stir over medium heat until cheese melts. Once cheese is melted enjoy a big bowl!
