Posted by imawheatwatcher on October 18, 2010

I thought that it would be a great use of this blog to post food storage friendly recipes every Monday. I have gotten several comments that people would LOVE more recipes. If you have a recipe that you love and would like to share, please email it to me!

Chili Con Pollo

3 large boneless, skinless chicken breasts
1 jar chunky salsa
1 can great northern beans, with liquid
1 can black beans, with liquid
1 can diced tomatoes, with liquid
2 tsp. Cumin

Place chicken in a greased 3 ½ to 5 quart slow cooker. Pour salsa, beans, tomatoes, and cumin over top. Cover and cook on low heat 6-9 hours. Break chicken into bite-size chunks with two forks before serving. Makes 8-10 servings.
