Food Storage Recipe Monday

I thought that it would be a great use of this blog to post food storage friendly recipes every Monday. I have gotten several comments that people would LOVE more recipes. If you have a recipe that you love and would like to share, please email it to me!

Gayle’s Lasagna

* This is a labor of love lasagna. It is completely worth it though. Once you are done making this recipe you have dinner ready and one in the freezer for another time.

2 1/2 c tomatoes ( I used 1 can crushed tom. and 1 can diced tom. Use whatever you would like)
2 can tomato paste
3 c tomato sauce
2 garlic cloves, minced
3 TBS dried parsley
1 TBS dried basil
1 TBS dried oregano
5 tsp. salt
1 med onion (1/4 dried onion flakes)
2 lb hamburger (I used ground sausage)
1 lb cottage cheese
2 beaten eggs
1/2 c parmesan cheese
1 blox lasagna noodles, cooked
1 lb. mozzarella cheese, shredded

Combine tomatoes, tomato paste, tomato sauce, garlic, 1 TBS parsley, basil, oregano, 3 tsp. salt and a dash of pepper and onion. Simmer 2 Hours. *This is what I did…I combined all those ingredients in my crockpot. Put the temp on low and let it simmer for 3-4 hours.* Brown hamburger and add to sauce, once it is done simmering. Combine 2 TBS parsley, 2 tsp. salt, cottage cheese, eggs, 1/2 tsp. pepper, and parmesan cheese in a bowl. Grease 2 9X13 pans. Place a small layer of sauce, *a layer of noodles, a bigger layer of sauce, a layer of cottage cheese mixture, and mozzerella cheese, repeat from * until you run out of room.

Take one lasagna and bake it at 350 degrees for 45-60 minutes. Feeds 8-10 people.

The 2nd lasagna: place plastic wrap over the top (after it has cooled), then wrap the whole casserole in foil. Write on top, defrost in fridge (take out of freezer in the morning and put in the fridge) then bake at 350 degrees for 45-60 minutes.

    Yeah!! This is a HUGE favorite at our place. Dang it looks yummy–and it’s only breakfast time. Now that’s the mark of a good recipe. ha ha ha!
