Food Storage Recipe Monday

Posted by imawheatwatcher on June 7, 2010

I thought that it would be a great use of this blog to post food storage friendly recipes every Monday. I have gotten several comments that people would LOVE more recipes. If you have a recipe that you love and would like to share, please email it to me!

Chocolate-Chip Oatmeal Cookies

Mix Until Creamy:
1 c. shortening
3/4 c. sugar
3/4 c. brown sugar
1 tsp. vanilla
1/2 tsp. water

Add:
2 eggs (2 TBS dry powdered eggs + 1/4 c. water)
2 1/2 c. whole-wheat flour*
1 tsp. baking soda
1 tsp. salt
3/4 c. oatmeal
12 oz. chocolate chips

Bake at 375 degrees for 10-12 minutes. Remove from oven while still light brown in color. Yields: approx. 3 dozen cookies. *When doubling this recipe, try using 4 cups flour and 1 1/2 to 2 cups oatmeal.

I got this recipe from Crystal Godfrey’s book “I Can’t Believe It’s Food Storage”

*These are my FAVORITE cookie! I can eat the whole batch. Happy Eating
