Food Storage Recipe Monday

I thought that it would be a great use of this blog to post food storage friendly recipes every Monday. I have gotten several comments that people would LOVE more recipes. If you have a recipe that you love and would like to share, please email it to me!

Enchilada Casserole

1 lb. ground beef
1/4 cup chopped onion (or 2 TBS dried minced onion)
1 bell pepper, chopped
1 can black beans (2 if you want to omit the beef and go veggie)
1 can rotel tomatoes with chilis
1 can cream of chicken soup
15 tortillas (store bought, uncooked, or homemade)
2 ounces of shredded cheese

Cook ground beef, onions and bell pepper together. Once browned add in the remaining ingredients, except tortillas and cheese. Let those come to a simmer. While waiting for the filling to cook cut up the tortillas into bite size pieces. Put a layer of 1/2 the tortillas on the bottom of a greased pan. Then add the filling on top and finish off with the remaining tortillas. Bake at 350 degrees for 30 minutes. Put the cheese on top and cook for another 10 minutes.

I got this recipe from my mother-in-law. I tweaked it a bit to make it appeal to my family.

    I love that there are black beans in there. We sneak them in everywhere that we possibly can and they seem to work with everything…well almost everything.
